Our tahini is
distinguished by a delicious aroma and a fine texture guaranteed
by carefully selecting the sesame seeds for processing. In fact,
selection of the seeds is a key factor in producing a high or low
quality product. Color, taste, and oil content are the main factors
determining the quality and thus price of sesame seeds.
Sesame seeds
undergo many preparation steps starting from pre-cleaning of natural
seeds, to hulling, washing, roasting, post-cleaning and finally
color sorting before grinding them into a paste commonly known as
tahineh or tahini.
Tahini
is a traditional ingredient in many Middle Eastern dishes such Hummus
(chickpea dip) and Baba ghanoush (eggplant dip). Hummus,
a Middle Eastern appetizer that has become a universal favorite
is made of ground chickpeas, garlic, lemon juice, salt, and tahini.
Baba ghanoush, another favorite appetizer known
throughout the Middle East, has a base of roasted eggplant seasoned
with tahini, lemon juice, garlic, and salt. These sesame-based dishes
have been handed down from generation to generation for centuries.
